Volans 6-Year Extra Aejo

A high-quality tequila aged six years in American White Oak, formerly Bourbon barrels with a light char.

On a cool morning in early January 2016, 10 American White Oak barrels, formerly Bourbon barrels lightly charred, were filled at 48% ABV (96 proof) and stored in the distillerys barrel cellar. But, to Fourth-generation Master Distiller Felipe Camarena, the secret of aging is not time in a barrel but rather the art of balancing how a Tequila develops a life of its own in the barrel and the aging environments.

Only 2,000 bottles were produced.

The Maestros decision.

Extra Aejo Tequilas must be aged at least three years. Originally, Felipe had earmarked five years as Tequilas aging potential. However, barrel tastings began in early 2019, and in a 2021 tasting, Felipe was captivated by the Tequilas maturation, showcasing a layered and complex body alongside a light caramel hue. I am not sure when, but this Tequila will become an aged masterpiece, recalls Felipe, who decided to extend the aging process, a consequential decision as each year of aging means less Tequila due to evaporation of the angels share.

A Masterpiece is born.

In the early Spring tasting of 2022, after six years in barrels, a masterpiece was born: a complex body and lavish layers of floral, dried fruit, citrus, baking spices, chocolate, and salty caramel flavors balanced with mineral and cask notes. A first sip awakens the palate with citrus notes, a second warms the soul with rounded heat and luscious flavors, and a third settles the mind with a long-lasting, elegant finish steeped in terroir.

The labels were designed by Eduardo Mejia and hand-printed and hot-stamped at a one-hundred-year-old printing shop in Guadalajara, Jalisco.

Tasting Notes

• The aroma is pure highland agave, peppery oak, soft caramel, and grilled pears.
• The palate is roasted agave, dark honey, cinnamon and cardamom spice, citrus-scented almond cookies, cocoa powder, and faint hints of handfuls of herbs and olives on the back end.
• The finish is slightly dry, with oak notes and agave lingering for minutes.
• The proof is 86, and alcohol by volume is 43%. The bottle size is 700mL.
