Confianza Blanco: The Pristine Essence of Agave

Crafted with unwavering devotion to traditional methods, Confianza Blanco is a pure and authentic expression of 100% Blue Weber Agave. Our agave is cultivated through organic farming, allowing the plants to develop rich, concentrated flavors.

The journey begins as master Jimadors hand-harvest each mature agave spike. The pias are then slowly baked for 24 hours in traditional brick ovens before resting for 24 hours. This meticulous process ensures the agave’s natural sugars are fully concentrated.

A diamond-cut roller mill delicately extracts the precious agave juices collected in stainless steel vats for fermentation. In an ingenious Confianza touch, classical music is played during fermentation to subtly stimulate the yeast maximizing its ability to transform sugars into alcohol.

Following 5-9 days of fermentation, the wash is double-distilled in copper pot stills. Only the purest “heart” of each distillate run is reserved for bottling as Confianza Blanco. Unaged and uncompromised, each 750ml bottle offers agave’s vibrant, vegetal essence with bright citrus notes.
