The Antica Distilleria Domenico Sibona is located in the Roer region in the municipality of Piobesi d’Alba, a few kilometers from Alba.
The special thing about Grappa Sibona is that it has a special distilling license, the No. 1 of the UTF.
Pomace from freshly harvested grapes (mainly from the Dolcetto and Arneis grape varieties), selected by Sibona during the harvest, is used.
Distillation is carried out entirely in-house in copper stills, and ageing takes place for a long period in stainless steel tanks. This grappa is matured for an initial 2 years in medium-sized barrels made from classic oak and a further 2 years in Tennesse whiskey barrels.
Storage in whiskey barrels has been tested by Sibona as an innovation and leads to high-quality results.
