Antica Distilleria Domenico Sibona is located in the Roero area in the municipality of Piobesi d’Alba, a few kilometers from Alba.
The special thing about Grappa Sibona is that it has a special distilling license, the No 1 of the UTF.
Pomace from freshly harvested grapes (mainly from the Dolcetto, Barbera, Nebbiolo varieties), selected by Sibona during the harvest, is used.
Distillation takes place entirely in-house in copper stills, and aging takes place for a long period in stainless steel tanks. An aging of 2 years in medium sized classic oak barrels and 2 years in rum barrels completes this grappa.
The storage in rum barrels has been tested by Sibona as an innovation and leads to high quality results.
