The appellation covers some 86 municipalitiesin the Pyrnes-Orientales and 9 in the Auderegion. The soils are mainly coarse granite andgneiss sand, along with brown and black schistand some plots of red limestone.
Winemaker’s note
The white varieties are vinified by fermenting the must after thepressing, in its liquid phase. For the red varieties, the must ismacerated in contact with the skins. The fortification halts the action ofthe yeast before it has converted all the sugar into alcohol. This is howRivesaltes wines retain part of the natural sweetness contained in thefruit. The wines are matured in wooden casks which they can carry onmaturing gently for over fifty years.
Tasting notes
Boasting a beautiful amber colour with brickredtints, this cuvee exhales lovely notes oftruffle, dried fruits such as hazelnuts andcurrants, and cinnamon.Pure velvet on the palate, with an endlessfinish.
