Highland Park has partnered with Australian bar operator, ‘The Speakeasy Group’ to release a bespoke whisky in its Mjlner venues in Sydney and Melbourne. Made using whisky matured in first-fill Sherry seasoned European oak casks, first-fill Sherry seasoned American oak casks and refill casks, the natural strength rarity will be on collector’s radars. 1,731 bottles are on offer globally, with a significant portion likely to be reserved for on premise consumption rather than retail. Blowing off the whiffs of alcohol reveals hints of toasted cereals, dried cranberry, apricot, cinnamon, distant honey and wood smoke. The entry is big on honey and spice, climaxing in a spike of spirit heat, a rush of dried fruits, bitter dark chocolate and trace sulphur, while the aftertaste lingers with honey, struck match and distant smoke. Up there with the most rustic and intense HPs we’ve tasted to date, ample water creams up the flavours, but the prickle may still be too much for some. Give it plenty of time to show its best.
