An extraordinary new release from the renowned Cascahuin distillery that has already garnered significant buzz.

Crafted using single-estate Michoacan agaves, these precious plants are slow-cooked for three days in Cascahuin’s traditional stone ovens with steam injection, followed by an additional day to cool before being meticulously crushed on the distillery’s roller mill.

Fermentation occurs in stainless steel tanks, leading to a double distillation process. The first distillation occurs in Cascahuin’s stainless steel alembic still with a copper coil. In contrast, the second distillation is completed in a full copper alembic with a copper coil, bringing the tequila up to 55% ABV. It is then proofed down with deep well water from the site, and the barrels are filled at 44.5% ABV.

This Aejo was initially rested in stainless steel for 15-30 days before embarking on an 18-month aging journey in a thoughtful selection of barrels: American Oak, ex-Bourbon Sherry Cask, and French Oak ex-Cognac Martell VSOP barrels. Finally, it is blended at cask strength to achieve its remarkable complexity.

As the very first Aejo Tequila by El Gran Legado De Vida, this release marks the brand’s new ultra-premium trademark bottling. Aged for 18 months and bottled at 43% ABV (86 Proof), it’s a testament to dedication and craftsmanship.

Tasting Notes:

  • Aroma: A complex bouquet of cooked agave, intertwined with notes of dried fruit from the sherry casks, subtle vanilla and caramel from the bourbon oak, and perhaps a delicate floral or spiced nuance from the cognac barrels.
  • Taste: A rich and full-bodied palate, showcasing the natural sweetness of the agave balanced by layers of toasted oak, baking spices, and a hint of dark chocolate or dried stone fruit. The sherry and cognac cask influence should lend a refined complexity.
  • Finish: Long, smooth, and exceptionally clean, with lingering notes of sweet agave and a warm, elegant oak character.
