Picolit is an ancient white grape variety from Friuli, with a golden, sweet and intense character. Its particularly sweet grapes are characterised by small clusters formed by very few berries (due to a defect in pollination that causes a partial abortion of flowers).
The extremely rare marc is collected immediately after pressing and fermented in an airtight manner.
Distillation takes place in a discontinuous 8-ounce copper plant.
The process is slow and takes place rigorously at a low steam temperature in order to preserve the aromatic properties of the raw materials, which are filtered out and enhanced by the expert use of the reflux condenser.
