This unique expression from Chacolo features the rare Azul Telcruz agave varietal (Agave angustifolia), which takes about ten years to reach maturity before undergoing an additional 3-year “capn” (quiote removal) process. It is one of 14 Angustifolia agave subspecies cultivated by Chacolo.
Production:
- Agave cooked in underground ovens and milled by hand with axes
- Natural fermentation in wooden tiles using mountain spring water
- Double distillation in a Filipino style still
Tasting Notes:
- Nose: Minty with notes of slightly burnt french fries
- Palate: Sweet powdered sugar followed by a distinctive acidic note akin to overripe lime
- Finish: Pronounced burnt fry character, which the reviewer found enjoyable
