Agave Selection:

The Navarro family carefully harvests four varieties of locally grown Agave Salmiana:

• Verde (featured in this bottle)
• Chino
• Cuerno
• Blanco

Traditional Production Methods:

1. Roasting: Agaves are cooked in an above-ground stone oven, imparting a subtle smokiness.
2. Mashing: Cooked agave is hand-mashed, preserving its delicate flavors.
3. Fermentation: A blend of agave juice, fibers, ambient yeasts, and pulque creates a uniquely complex mash.

The “Mongolian” Still:

At the heart of Campanilla del Palmar’s uniqueness is its rare distillation process:

• Utilizes an ancient “Mongolian” type still
• Features an internal 15-liter clay pot for spirit collection
• Requires meticulous hand-ladling of cool water for precise condensation control
