Agave Cuerno (A. salmiana ssp. crassispina) | 15-20 Year Maturation
This exceptional mezcal is crafted from the rare and slow-growing Cuerno agave (Agave salmiana subspecies Crassispina), which takes 15-20 years to reach maturity. During fermentation, master distiller Jaime Navarro adds 40 liters of pulque to kickstart the sugar-yeast interaction. The spirit is then distilled in small batches using a traditional campanilla-style still.
Tasting Notes:
- Nose: Sweet peppers, candied rose, lavender, white florals, and an aromatic strawberry note
- Palate: Delicate, sweet candied florals up front, followed by lemon oils, honeydew, lychee, caramelized carrots, and more sweet peppers
