Traditional Production Methods

Astral Tequila is made from organically grown agaves harvested at high elevations in the mountains of Jalisco. The agaves are slow-roasted in traditional hornos (stone ovens) until they are golden brown and caramelized. After roasting, the pias (agave hearts) are crushed, and the juice is fermented with the bagazos (agave pulp) using wild yeasts. This fermentation process, which takes 8-10 times longer than conventional methods, maximizes the agave character. The spirit is then twice-distilled and bottled at a higher-than-normal 92 proof, resulting in elegant and subtle flavors.
