The Don Julio Anejo is aged for at least one year in small white oak barrels. This sounds quite short, but the Mexican climate speeds up the aging process by quite a bit. Anejo means that the tequila has reached the highest level of maturity. According to the law, Tequila may only be distilled in certain regions in Mexico from the fermented juice of a single agave variety – namely from the “Agave Tequiliana Weber”. Traditional production gives the tequila its uniqueness.
