Master distiller Enrique Fonseca employs a unique distillation technique. He starts with earthy Atotonilco El Alto agave distilled in stainless steel alembic pot stills, followed by a second distillation in copper pots. This, combined with aging for five years in French oak casks, results in a rich, balanced tequila with a distinctive agave character unique to the high-altitude Atotonilco region (5,200′).
