The ZINCENZO! was hand-picked and underwent full, true carbonic maceration: whole Zinfandel clusters were sealed in a fermentor from which all oxygen had been expelled by replacement with CO2. More CO2 was added daily, and any juice collecting in the bottom of the tank was drawn away in order to prevent alcoholic fermentation from beginning. At the end of two weeks, the clusters were removed from the fermentor and pressed; the resulting new wine was placed in four neutral 227L barriques where it rested for 9 months before being bottled unfined and unfiltered. – FH
