As well as this, Mike Peterkin has been experimenting with tannin management andworking to encourage the development of flavour compounds in grapes early in the season and conserving them in the heat of summer. He believes that the combination of these two factors have enabled Pierro to achieve fully ripe tannins without excessive alcohols and so produce reds that have’finesse and elegancewith full flavour’.
