Grippy, tight tannins (though they should mellow in time) and bright acidity. Not as bold as a typical Napa Cabernet. This gorgeously hearty wine works well with grilled asparagus beside a nice rare steak or a 12-hour brisket. Because it’s organic, it would be a detailed touch for a dinner party to serve all organic cuisine.
